Winemaking

Soft pressing of grapes, without destemming and crushing, in order to extract as clear a must as possible. Fermentation at low temperature is then carried out in stainless steel tanks. Greater freshness and minerality are ensured by avoiding malolactic fermentation. This is followed by 12 Months maturation on lees in oak barrels, with frequent lees stirring.

Winetasting

Amber yellow colour, with aromas of pear, mango, peach and flint on the nose. The latter originates from maturation in new French oak barrels. 

On the palate, it features good savouriness and structure, with a fresh and lively finish.

Food pairing

We advise you to pair it with a fatt fish such as salmon fillet, with local spices and with rice or with a platter of green (or white) asparagus, eggs and Béarnaise sauce.
