Winemaking Soft pressing of Merlot and Savagnin grapes, without destemming and crushing, in order to extract as clear a must as possible. Fermentation at low temperature is then carried out in stainless steel tanks. Greater freshness and minerality are ensured by avoiding malolactic fermentation. Characteristics The resistant varieties were planted in 2001 to diversify production. They combine resistance to grape diseases – hence the agronomic benefits of growing them – with high oenological quality. These characteristics allow us to make a fine wine, while growing our grapes in a more environmentally friendly way. Winetasting Bright, golden yellow colour, with aromas of exotic fruit on the nose – lychee, pineapple and green apple, too. On the palate, it features good freshness and minerality that make it a pleasure to drink. Food pairing A great aperitif wine for every occasion. Thanks to its freshness and minerality, it is also good with fish (fish risotto, brown trout, rainbow trout) and seafood dishes. |
